Captain’s log, Stardate 96950.48: Still no stove. Tonight I employed two of my most faithful cooking appliances – the rice cooker and the electric skillet – using them to swiftly prepare a delicious meal.
This is a quick and tasty meal and, if you have the sauce ingredients on hand, comes in under 10 bucks for two servings. Serve over rice or as a filling for lettuce wraps.

Sweet Hoisin Chicken
1 lb ground chicken
1 medium or 2 small zucchini, sliced
1 carrot, julienned or grated
2 Tbsp hoisin Sauce
1 Tbsp sweet Thai chili sauce
2 tsp soy sauce
1 tsp canola oil
Sesame seeds or sliced green onions, for garnish (optional)
Stir together sauce ingredients. Set aside.
In a large, non-stick skillet, brown chicken, breaking up with spatula. Remove from pan.
Sauté zucchini in canola oil until it begins to soften. Add carrot and sauté for 2 minutes.
Return chicken to pan, add sauce, stirring until everything is coated.
Serve on rice. Garnish with sesame seeds or sliced green onions.
