I’m house-sitting this week, so, of course, I took Hello Fresh with me! (Sorry, Jacob.)
Tandoori Meatball Curry, Saag Aloo and Basmati Rice. So worth the three pans I had to wash! (And I only feel a little bad about cooking a curry in somebody else’s house…)
I’m still a wuss when it comes to spicy food, but I couldn’t stop eating it. It was such a great combination of flavours and textures. The only thing I would have added is a blob of chutney or something with a tiny bit of sweetness. Then again, maybe not. It was pretty stellar.
I was looking forward to this all week – Garlic-Lime Chicken with Avocado Salsa and Mexican Street Corn! I actually wanted to make it first, but the avocado needed a couple of days. Thankfully, that’s all it took because I didn’t want to wait any longer for that street corn!
The first time I had street corn, or elote, I was at Chino Latino in Minneapolis. I don’t remember much else about that trip, but I do remember that corn. Biting into my elote on Friday night brought it all back. This time, however, I stopped at one cob.
What did I do with the rest of the corn? And the other half of the chicken and salsa? Nachos, of course!
I stripped the corn off the cob, stirred it into the creamy, cheesy elote sauce (mayo, sour cream, garlic, chili powder and feta), then added it to the nachos, along with the chicken, tomatoes, shredded cheese and more feta. Omg. #hellofreshhacks
I made the final meal of the week back at home… do you recognize the plate?
For such a simple meal, this one was pretty outstanding. Honey-Mustard Pork Tenderloin with an Apple-Lentil Green Salad. I think the name says it all!
