This might be my new favourite way of making rice. I made it on Saturday and what wasn’t demolished that night was eaten by the Mascot on Sunday. On Monday, he asked me to make it again. And this is a kid who would’ve gagged at the mere suggestion of coconut a week ago.
It’s a Jaime Oliver “recipe”, stolen from his 15 minute meals show. Jaime’s name for it is Sticky Rice, but that is a little misleading. Ours wasn’t sticky in the least… but it was fluffy and fragrant and absolutely, completely addictive. I thought that there would be way too much for just the three of us, but everyone had seconds.
Ok, thirds.
Are you ready for this? Its simplicity will blow. your. mind.
In a rice cooker, combine: 1 can reduced-fat coconut milk (well-shaken), 1 can water, 1 can Basmati rice. Cover and cook.
That’s it. Seriously.
Note: yes, you can make this in a pot on the stove, tightly covered, but why don’t you have a rice cooker?
