Tuesday Tutorial – Amazeballs!

I am finally sharing my recipe for Amazeballs! Why are they called Amazeballs!? Because they are amazing and, well, as you can see, they’re balls. Balls, balls, balls.
Ok, ok…stop giggling.
The ingredient list is short and sweet, but don’t let that fool you; these little babies are chock-full of yummy. And, they’re a perfect little 2-bite snack packed with energy, protein, fibre, and all sorts of natural goodness.
Amazeballs!
1 cup honey dates, pitted
2 tbsp coarsely ground almonds (start with almost 1/4 cup whole and grind in food processor)
2 tbsp quick or regular oats
2 tbsp hemp hearts (shelled hemp seed)
pinch of coarse salt
1/4 cup All-Bran Buds (or other high-fibre bran cereal)
Step 1: in the bowl of a food processor, chop dates. Process until they clump together and form a ball.
Step 2: add almonds, oats, hemp hearts and salt. Pulse until well-combined. (A spoonful of mixture will hold together when squeezed lightly.) If mixture is too sticky, add more oats, 1/2 tbsp at a time. Add bran cereal and pulse until just combined.
Step 3: transfer mixture to a small bowl. Working with one lightly-packed tablespoon at a time, squeeze and roll mixture into smooth, uniform balls. (With impeccably clean hands.)
Step 4: place finished balls on a parchment lined plate and chill until firm. Store in a covered container or zip-top bags. Makes 12.
I’m sure they’ll keep for days upon days, but let’s be realistic here; they’ll be gone before you can say…

Note: you can make these gluten-free! Use certified gluten-free oats and substitute your favourite gluten-free cereal (crispy rice or similar).
